This recipe comes strait from Grandma Rizor's files (Rob's grandma).
Ingredients:
3 eggs
2 cups sugar
1 tsp vanilla
1 cup oil
1/2 cup sour cream
2 cups zucchini - grated (do not peel)
3 cups flour
1/4 tsp baking powder
1 tsp baking soda
1 tsp salt
1 TBS cinnamon
1/2 cup nuts (optional and whatever you want to add)
Directions:
- Blend together the eggs, sugar, vanilla, and oil.
- Add to the mixture the sour cream.
- Then, add the zucchini.
- Finally, add the flour, baking powder, baking soda, salt, and cinnamon.
- Add the nuts, optional choice.
Bake the mixture in 2 loaf pans for 1 hour and 20 minutes at 350 degrees. Again, this recipe makes 2 (two) 9x5x3 breads. Based on the stove you are using, I would suggest to check the breads after an hour to determine if they are done, so as to not over cook them. Use the "toothpick" in the bread to determine if they are done. You can know if the toothpick comes out clean.
